    Keto Fathead Dough is a combination of mozzarella cheese and almond flour to create a dough that is perfect for pizza, bagels, rolls, and more.

    Key ingredients

    Ingredients for keto pizza, all in separate bowls.

    For the Fathead Pizza Dough:

    Shredded Mozzarella Cheese - this is the main ingredient in our dough. You'll need cheese both to make the dough and to top the pizza.

    Cream Cheese - Cream cheese melts with the mozzarella to create a dough.

    Egg - One large egg binds the ingredients together and aids in browning.

    Fine Almond Flour - This gives a bread-like texture to the pizza dough.

    For Assembling the Pizza:

    Low Carb Pizza Sauce - our recipe has 8 grams of net carbs per serving.

    Shredded Mozzarella Cheese - To generously top your pizza.

    Pepperoni Slices - Use your favorite. We like spicy pepperoni.

    Toppings

    Try any of these keto friendly choices:

    • Meats: Pepperoni, salami, sausage, steak, chicken, bacon.
    • Keto vegetables: Onion, peppers, mushrooms, spinach, olives, broccoli.
    • Other delicious toppings: Extra cheese, anchovies, pickled veggies, sundried tomatoes, pesto sauce, banana peppers.

    Be sure to pre-cook any meats. Veggies can be lightly sauteed, since they won't be in the oven very long.

    Variations

    We're making a traditional pepperoni pizza today, but you can use this dough to make any variety of specialty gourmet keto pizza that you want.

    • Use Keto BBQ Sauce, and top with grilled chicken, peppers, and onions for a BBQ chicken pizza.
    • Make a traditional white pizza (pizza bianca) with olive oil, garlic, herbs, and a mix of white cheeses with any of your favorite toppings.
    • Try Keto Enchilada Sauce topped with Mexican cheese blend, taco meat, peppers, and black olives for a delicious taco pizza.

    How to make keto pizza

    Step 1: Combine mozzarella cheese and cream cheese in a microwave-safe bowl and microwave for 30 seconds. Remove and mix with a fork until mostly combined. Microwave again and then mix again.

    Step 2: Add egg, almond flour, baking powder, and seasonings to the melted mixture. Mix all the ingredients together until they combine and are cool to the touch.

    Step 3: Knead the dough by hand, then place on a piece of parchment paper.

    Step 4: Top with a second piece of parchment, then use a rolling pin to form into a round pizza crust. Carefully remove the parchment paper and transfer to a pizza stone or pan.

    Step 7: Sprinkle on shredded mozzarella cheese.

    Expert Tips: Working with fathead dough

    To avoid fathead dough sticking to your hands or your tools, use a drizzle of oil to coat your fingers or fork as you are mixing and kneading.

    Placing your dough in between 2 sheets of parchment paper will prevent sticking when rolling flat with a rolling pin.

    If your dough becomes too firm to roll out properly, it might need to be warmed.

    Start by kneading it by hand to soften it up. If that doesn't work, pop it in the microwave for 15 seconds at a time until it's the right consistency again.

    FAQs

    Can I buy keto pizza sauce?

    Traditional store bought pizza sauces have added sugar, and can have upwards of 20 grams of carbs per serving. Luckily, there are some excellent low carb pizza sauce options available now.
    You should look for a store bought sauce that has less than 8 grams net carbs per serving for a keto-friendly option.
    Try Rao's homemade pizza sauce. With no added sugars it only has 3 grams of carbs per ¼ cup.

    Can you make keto pizza dough ahead of time?

    Yes, keto pizza dough with almond flour works well as a make ahead meal builder. The best thing to do is to par-bake the crusts and freeze them.
    Make a large batch of the dough by doubling or tripling this recipe. Roll out into rounds, and bake for 10 minutes. Remove from the oven, let cool, and wrap well with plastic wrap. Store your keto pizza crusts in the fridge for up to a week or in the freezer for up to one month.
    You can store unbaked fathead dough in the fridge for 1-2 days. You may need to warm it up using the microwave to make it easy to roll after being refrigerated.

    Why do I need to bake fathead keto pizza dough twice?

    Because this dough is made of mostly cheese, it has a longer bake time. Pre-baking the fathead pizza crust allows it to cook all the way through, without burning the toppings.

    Should I use a pizza stone to make keto pizza?

    You can use a regular metal pizza pan or sheet pan to make this pizza dough recipe, but using a pizza stone or a cast iron pan will make your low carb pizza crust extra crispy.
    Cast iron and pizza stones create flat, hot surfaces that hold onto heat creating a crispy crust.
    Place your pizza stone in the oven before pre-heating the oven, so that it's hot before you pre-bake the dough.

    Ingredients
      

    For Pizza Dough

    • 1 ½ cup shredded mozzarella cheese
    • 2 oz cream cheese softened
    • 1 large egg room temperature
    • ¾ cup fine almond flour
    • 1 teaspoon baking powder
    • ½ teaspoon Italian seasoning
    • ½ teaspoon garlic powder
    • ¼ teaspoon onion powder

    For Pizza

    • Low carb pizza sauce
    • Shredded mozzarella cheese
    • Pepperoni slices
    • Sliced green peppers
    • Sliced mushrooms
    • ...Or your favorite pizza toppings!

    Instructions
     

    • Preheat the oven to 425 degrees F.
    • Combine mozzarella cheese and cream cheese in a microwave-safe bowl and microwave for 30 seconds.
    • Remove and mix with a fork until mostly combined. Microwave for another 30 seconds, then mix again.
    • Add egg, almond flour, baking powder, and seasonings to the melted mixture.
    • Mix all the ingredients together until they combine and are cool to the touch.
    • Knead the dough by hand, then place on a piece of parchment paper.
    • Top with a second piece, then use a rolling pin to form into a 12- to 16-inch round pizza crust. Remove the parchment carefully, then transfer to a parchment-lined pizza stone or pan.
    • Bake for 10-12 minutes at 425 degrees. Remove from the oven and brush with olive oil.
    • Add pizza sauce, shredded cheese then your desired toppings. Bake for an additional 5-8 minutes, until cheese is melted and bubbly.
    • Serve warm.

    Notes

    • To avoid fathead dough sticking to your hands or to your tools, keep a little bit of oil near by to coat your fingers or fork as your mixing.
    • Use this dough with your favorite sauces and toppings to create your own gourmet pizza.
    • If your dough is hard to work with, heat it in the microwave for 15 seconds and knead by hand to soften.
    • Keto pizza dough works really well as a make ahead meal builder. The best thing to do is to par-bake the pizza crusts and freeze them. Double or triple this recipe so you have a few frozen crusts to use when needed.
