INGREDIENTS IN KETO PIZZA
For the Fathead Pizza Dough:
Shredded Mozzarella Cheese - this is the main ingredient in our dough. You'll need cheese both to make the dough and to top the pizza.
Cream Cheese - Cream cheese melts with the mozzarella to create a dough.
Egg - One large egg binds the ingredients together and aids in browning.
Fine Almond Flour - This gives the bread-like texture to the pizza dough.
Baking Powder - Helps the dough rise when baking.
Italian Seasoning - This blend of herbs just screams pizza.
Garlic Powder - Another classic Italian flavor.
Onion Powder - Just a bit gives a warm, savory flavor to the fathead dough.
For Assembling the Pizza:
Low Carb Pizza Sauce - my recipe has 8 grams net carbs per serving.
Shredded Mozzarella Cheese - To cover the pizza; it gets nice and melty.
Pepperoni Slices - Use your favorite. I like a spicy pepperoni.
Sliced Green Peppers, Sliced Mushrooms, or your favorite pizza toppings!

HOW TO MAKE KETO PIZZA
- Combine mozzarella cheese and cream cheese in a microwave-safe bowl and microwave for 30 seconds.
- Remove and mix with a fork until mostly combined. Microwave again and then mix again.
- Add egg, almond flour, baking powder, and seasonings to the melted mixture.
- Mix all the ingredients together until they combine and are cool to the touch.
- Knead the dough by hand, then place on a piece of parchment paper.
- Top with a second piece of parchment, then use a rolling pin to form into a round pizza crust. Carefully remove the parchment paper and transfer to a pizza stone or pan.
- Bake as directed. Remove from oven and brush with olive oil.
- Add desired toppings. Bake as directed, until cheese is melted and bubbly. Serve warm.

TRICKS FOR WORKING WITH FATHEAD DOUGH
This dough can get sticky. After all, it is made with a whole bunch of melted cheese. To avoid fathead dough sticking to your hands or to your tools, keep a little bit of oil near by to coat your fingers or fork as your mixing.
Parchment paper is your friend here. Use it to roll out the dough so that it doesn't stick to your counter or your rolling pin.
If your dough gets to firm to roll out properly, it might need to be warmed up.
Start by kneading it by hand to soften it up. If that doesn't work, pop it in the microwave for 15 seconds at a time until it's the right consistency again.

IS PIZZA KETO?
While this recipe for keto pizza using fathead dough is keto friendly, pizzas from restaurants or the freezer section are generally not going to be keto. Pizza is made with high carb wheat flour, so you are going to love this keto recipe that uses almond flour instead.

We're making a traditional pepperoni pizza today with our keto pizza sauce, but you can use this dough to make any variety of specialty gourmet keto pizza that you want.

Traditional store bought pizza sauces have added sugar, and can have upwards of 20 grams of carbs per serving. Luckily, there are some excellent low carb pizza sauce options available now.
You should look for a store bought sauce that has less than 8 grams net carbs per serving for it to be a good keto option.
Try Rao's homemade pizza sauce. With no added sugars it only has 2 grams of carbs.
LOW CARB KETO PIZZA TOPPINGS
Wondering what pizza toppings are keto friendly? Try any of these:
- Meats: Pepperoni, Salami, Sausage, Steak, Chicken, Bacon.
- Keto Vegetables: Onion, Peppers, Mushrooms, Spinach, Olives, Broccoli.
- Other Delicious Keto Pizza Toppings: Extra Cheese, Anchovies, Pickled Veggies, Sundried tomatoes, Pesto sauce.
Pineapple might be the only pizza topping that you can't add to your keto pizza, because fruit will have too much sugar in it. Otherwise, get creative and add your favorite toppings to your keto pizza.
Be sure to pre-cook any meats you top your keto pizza with. Veggies can be lightly sauteed first as well, since they won't be in the oven very long.
HOW MANY CARBS ARE IN KETO PIZZA DOUGH?
One quarter of this keto pizza dough, minus any toppings you add, has 10 grams of carbs and 4 grams of fiber, bringing it to 6 grams net carbs. That's pretty good for a big, delicious slice of pizza!
CAN YOU MAKE KETO PIZZA DOUGH AHEAD OF TIME?
Keto pizza dough with almond flour works really well as a make ahead meal builder. The best thing to do is to par-bake the pizza crusts and freeze them.
Make a large batch of the dough by doubling or tripling this keto pizza recipe. Roll out into pizza rounds, and bake for 10 minutes. Remove from the oven, let cool, and wrap well with plastic wrap. Store your keto pizza blanks in the fridge for up to a week or in the freezer for up to a month.
You can also store unbaked fathead dough in the fridge for 1-2 days. You may need to warm it up using the microwave to make it easy to roll out after being stored this way.
WHY DO I NEED TO BAKE FATHEAD KETO PIZZA DOUGH TWICE?
You'll notice that we're baking our low carb keto pizza crust first on it's own, without any toppings. Then we add the sauce and pepperoni and bake it a second time. This is the way to get the best keto pizza ever.
Because this dough is made of mostly cheese, it needs to bake for a while to become solid. Pre-baking the fathead pizza crust allows it to cook all the way, without burning the toppings.
SHOULD I USE A PIZZA STONE TO MAKE KETO PIZZA?
You can absolutely use a regular metal pizza pan or sheet pan to make this pizza dough recipe, but using a pizza stone or a cast iron pan will make your low carb pizza crust extra crispy.
The reason is that stones and cast iron hold onto heat, which then turns your oven into a real pizza oven with a flat, hot base.
When using a pizza stone, let the stone pre-heat along with the oven so that it's hot before you add the pizza dough.

- Add egg, almond flour, baking powder, and seasonings to the melted mixture.
