    This easy Tuscan Chicken Recipe is the perfect comfort meal for your family. It's easy to make and is full of flavor. Chicken breasts are seared with Italian spices and then cooked in a delicious cream-based sauce.

    Chicken Breasts - Chicken breasts really soak up the creamy sauce and stay tender, making it the perfect choice for this recipe. Just make sure the chicken is boneless and skinless.

    Minced Garlic - You can't make Italian (inspired) foods without garlic, right? Mincing the garlic will help the flavor distribute evenly in the dish.

    Italian Dried Herbs - This recipe uses thyme, oregano, and red pepper flakes to bring beautiful herbaceous flavor.

    Chicken Broth - Chicken broth brings another source of chicken flavor to the dish, and also helps to thin out the consistency of the sauce.

    Heavy Cream - Heavy cream is used in this recipe, but if you are looking for a dairy-free alternative, coconut cream is a great substitute.

    Sundried Tomatoes - Every savory dish needs an element of brightness. And sundried tomatoes do just that.

    Grated Parmesan Cheese - Parmesan cheese has a nutty and sharp flavor, adding wonderful complexity to the sauce. If you're looking for a dairy-free option, nutritional yeast has a cheesy flavor that can be a great substitution.

    Spinach - The spinach will wilt as it is mixed into the sauce. Feel free to add more if you'd like.

    Step by step instructions

    Preheat your oven to 375F degrees.

    In a large cast iron skillet (or oven-safe skillet) heat oil over medium heat.

    Season both sides of the chicken with salt and pepper.

    Sear both sides of the chicken, about 5 minutes per side. Transfer chicken to a plate; set aside.

    Add the minced garlic to the hot skillet and cook for 1 minute. Add the thyme, oregano, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often.

    Stir in the sundried tomatoes and parmesan cheese.

    Return the cooked chicken to the skillet and spoon the sauce over the chicken.

    Bake for 18-20 minutes or until the chicken is cooked through.

    Remove the chicken, then add the spinach to the pan and stir it to coat. Let it sit for 5 minutes or until the spinach is wilted.

    Add the chicken back to the pan and spoon the sauce over the chicken.

    Serve warm with your favorite sides.

    • 1 tablespoon olive oil

    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 3 cloves garlic minced

    • ¾ cup low sodium chicken broth
    • ½ cup heavy cream
    • ½ cup sundried tomatoes chopped
    • ¼ cup fresh-grated parmesan cheese
    • 2 cups fresh spinach
