    Cottage Fries are crispy on the outside, fluffy on the inside, and perfectly spiced for the perfect side dish to compliment any dinner. Potatoes are a versatile vegetable that can be enjoyed a plethora of different ways.

    This recipe gives you the appealing texture of fried potatoes WITHOUT the need to deep fry.

    Potatoes - You will need 4 large baking potatoes for this recipe. Russet will give you Cottage Fries that are crispy on the outside and fluffy on the inside because of the high amount of starch.

    If you use Yukon Gold, the inside tends to be more dense and creamy on the inside. But either one is absolutely delicious.

    Salt - We all know salt and fries are a match made in heaven.

    Pepper - Pepper adds a complex element of heat that only black pepper can provide.

    Cayenne Pepper - Go light on the cayenne pepper to begin with, and add more heat to suit your needs.

    Olive Oil - Olive oil is the oil of choice in this recipe, but any neutral oil will work great, though we love the additional flavor olive oil adds to this dish.

    How to make cottage fries

    Preheat oven to 425 F degrees. Line a baking sheet with parchment paper; set aside.

    In a large mixing bowl, combine the potatoes, salt, pepper, cayenne pepper, and olive oil.

    Stir until the potatoes are evenly coated with oil.

    Place potato rounds on the prepared baking sheet, spaced evenly apart, and bake for 20 minutes.

    Remove from oven, flip over each potato slice, and return to the oven for an additional 20 minutes, or until they are golden brown and crispy.

    Serve warm.

    Best tips

    What kind of potatoes should you use? For this recipe, we used russet potatoes, but you can use any potato type you like.

    The thicker the potato slices, the longer they will take to cook through.

    Feel free to use any spice blend you like. They would be great with dried thyme, rosemary, Cajun seasoning, or a Greek spice blend.

    Storage instructions

    These Cottage Fries are best enjoyed warm, but you can store them in an airtight container in the refrigerator for up to 3 days. Though they may lose their crispy texture when reheated.

    Can also be frozen for up to 3 months. To reheat, warm them in an oven at 350 F for 10-15 minutes, flipping them over halfway through cooking.
