We'll start by roasting cauliflower florets so that they are tender, flavorful, and lightly browned. Roasted cauliflower is the perfect keto substitute for macaroni.
Then we'll mix them up into a rich keto cheese sauce that is incredibly delicious, made with cheddar cheese, cream cheese, butter, and heavy cream.
To get the classic breadcrumb topping on this keto mac and cheese, crushed pork rinds are added to the top to get nice and crispy in the oven.

INGREDIENTS IN KETO CAULIFLOWER MAC AND CHEESE
Cauliflower - You need a head of cauliflower, cut into small florets so that they cook evenly and are easy to eat. If you have a head of cauliflower that's particularly small, you may want to use a bit more. Overall you want 3 to 4 cups of florets.
Avocado Oil - This is our favorite oil to roast with as it has a high smoke point and is a bit healthier than some other oils. Olive oil might smoke and burn at the temperature we're using to roast the cauliflower in the oven.
Salt and Pepper - We're using very simple seasonings in this recipe, but you can always adjust them to your liking.
Heavy Cream - The decadent cream sauce in this dish is made possible by one of our favorite keto ingredients.
Cream Cheese - This makes the sauce nice and thick without the need for flour or starch.
Cheddar Cheese - We're using a blend of sharp and mild cheddar cheeses. Most of the cheese goes into the sauce, and we'll add a bit more as a topping.
Butter - This gives the sauce a rich and amazing texture.
Pork Rinds - This is optional, but a sprinkle of crushed pork rinds on the top of this casserole is amazing!

HOW TO MAKE KETO CAULIFLOWER MAC AND CHEESE
Start by preheating the oven to 425°F and lining a baking sheet with foil or parchment paper. Prepare a 1-quart baking dish by spraying it with cooking spray.
- Toss the cauliflower florets with oil, salt, and pepper, then spread them on the prepared baking sheet. Roast the cauliflower in the preheated oven for 20 minutes, or until browned and crisp-tender. When it's done, remove the cauliflower and turn down the oven temperature to 375°F.
