    Keto Coleslaw is a versatile crunchy salad with a simple sweet and creamy dressing. This easy side dish goes great with BBQ and is perfect for potlucks or meal prep.

    This keto coleslaw has all the traditional flavors and comes together quickly in one bowl for easy clean up.

    You probably have all of the ingredients at home already, just pick up a bag of shredded cabbage and you're ready to go. 

    We use pre-shredded coleslaw mix as a time saver for this recipe, as it typically includes carrots, green cabbage, and red cabbage for a colorful mix.

    All of the ingredients to make keto coleslaw in individual bowls.

    Mayonnaise - We tested this recipe with 4 different types, regular mayo was the winner.

    Dijon Mustard - We love the savory, lightly spicy flavor. It adds a necessary depth to the flavor of our keto slaw. 

    Apple Cider Vinegar - Vinegar thins out the dressing and gives a bright tang. We love using it to make our sugar free salad dressing recipe. 

    Coleslaw Mix - one 16-ounce bag of coleslaw mix is perfect for this recipe. Alternately, you'll need about 16oz of shredded cabbage.

    How to make keto coleslaw

    Step 1: In a large bowl, stir together mayonnaise, mustard, sweeter, vinegar, salt, and onion powder.

    Step 2: Whisk together until well combined.

    Expert tips

    This keto coleslaw needs at least 1 hour in the refrigerator before serving to allow the flavors to combine.

    Which type of mayo is best?

    We tested this low carb coleslaw recipe with regular mayo, light mayo, avocado oil mayo, and coconut oil mayo.

    All worked but yielded slightly different results. The important thing to do is not use a mayo that might be flavored or have added sugar.

    Regular full fat mayonnaise - this was our favorite. It had the best flavor and texture overall.

    Low fat mayonnaise - the flavor was still good, not as creamy.

    Avocado oil mayonnaise - We also really liked this version. It had a unique tangy flavor.

    Coconut oil mayonnaise - This version wasn't our favorite. You couldn't taste the coconut but it had a vinegar zing to it.

    FAQs

    Do I have to use a pre shredded mix?

    No, you can purchase two types of cabbage and shred them with a food processor, grater, or a sharp knife. If you want to lower the carb count, leave out the shredded carrots.

    Can I use the coleslaw dressing for anything else?

    The dressing is perfect to mix with other veggies and shredded broccoli, also sometimes called broccoli slaw.

    Can you eat KFC coleslaw on keto?

    KFC coleslaw is not keto friendly as it contains added sugar. One serving has around 15 grams of net carbs.

    Storage instructions

    This keto coleslaw is best served the same day for a crunchy texture, however, you can refrigerate leftovers in an airtight container for up to two days. The texture will change slightly as the cabbage absorbs the other ingredients.

    If you're looking to make this recipe ahead of time, we suggest mixing up the dressing and storing that in the fridge separately from the shredded cabbage.

    Ingredients
      

    • 1 cup mayonnaise Regular mayo is best
    • 2 tablespoons Dijon mustard
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon sweetener we used swerve granulated sweetener
    • 1 teaspoon kosher salt or ½ teaspoon of regular salt
    • 1 teaspoon onion powder
    • 1, 16- ounce bag of coleslaw mix

    Instructions
     

    • In a large mixing bowl, stir together the mayonnaise, mustard, vinegar, sweetener, salt, and onion powder.
    • Add the coleslaw mix and toss to coat.
    • Cover and refrigerate for an hour.
    • Mix again before serving.
    • Store in an airtight container in the refrigerator for up to 2 days.

    Notes

    • Coleslaw is always better if you let it rest for 1 hour in the refrigerator before serving to let all of the flavors combine.
    • Best served the same day you make it, but can be stored up to two days.
    • We tested this recipe with 4 different types of mayo. Regular full fat won.
    • This recipe is excellent for potluck style meals. Double it if serving a larger crowd.

      Too salty ! Is 1 tsp. Of salt the right amount ?

        We love receiving feedback and are sorry to hear you thought the dressing was too salty. Did you use kosher or regular salt? We use 1 tsp of Kosher in our recipe, which is half as salty as regular table salt. I will add a note to the recipe ingredients advising future readers.
