    Keto Coffee Cake

    A piece of classic coffee cake is the perfect accompaniment to your morning cup of coffee. This keto coffee cake with a sweet crumb topping is not only decadent, but it's paleo, gluten-free, and dairy-free too.

    Is there anything more versatile than a cake that can be served as breakfast, snack, or dessert?

    This keto coffee cake is light, airy, and moist.

    The optional crumb topping adds the perfect crunch that contrast so well with the tender cake. Plus it is so easy to make.

    Sugar free maple flavored syrup adds a keto friendly sweetness and a hint of maple flavor. We also use it in our keto blueberry muffins.

    You can also add a scoop of keto whipped cream and a sprinkle of cinnamon for the ultimate garnish.

    Key ingredients

    The ingredients needed to make a keto coffee cake all measured and in individual bowls.

    Cinnamon - Adds a touch of warmth and slight spicy flavor to your cake. We love it on our keto cinnamon sugar donuts.

    Sugar-free maple flavored syrup - We like using this syrup as the sweetener. It adds a little hint of maple flavor plus liquid, keeping your cake moist.

    How to make keto coffee cake

    Step 1: In a large mixing bowl, whisk almond flour, salt, baking soda, and cinnamon. 

    Eggs, oil, syrup and vanilla extract being added to the mixed dry ingredients in a glass bowl.

    Step 2: Add oil, maple flavored syrup, eggs, and vanilla extract, and mix until well combined.

    Step 3: Pour batter evenly into your prepared pan. Use the back of the spoon to level it out.

    Step 4: Optional crumb topping: In a small mixing bowl, mix ½ cup almond flour, 3 tablespoons of oil, and ¼ cup of sweetener.

    Step 5: Sprinkle the crumb mixture on top of the cake, and press it down into the cake batter lightly with the back of a spoon. 

    The keto coffee cake removed from the pan and cut into nine square pieces. Each square is topped with a raspberry and a dusting of powdered sugar.

    Step 6: Bake as directed. Cool before slicing and serving.

    Expert tips

    Don't over mix. Mixing your ingredients too much can alter the texture and give a much more dry crumb.

    Don't overbake: Oven models vary, so we recommend starting with the lowest recommended baking time first to ensure that your low carb coffee cake isn't dry.

    To check for doneness, insert a knife or toothpick into the center of the cake. If it comes out clean, it's done baking. If not, give it another few minutes before testing again.

    FAQs

    Is there coffee in coffee cake?

    Contrary to popular belief, there is actually no coffee in a coffee cake recipe. Typically, it's served with a cup of coffee for sipping or dunking.

    I overbaked my coffee cake, how can I fix it?

    Don't despair, there are ways to fix a dry, overbaked cake.
    The key is to add back moisture. You can do this in two ways:
    1. Drizzle some more sugar free maple syrup over the top of your coffee cake, allowing it to soak in before serving.
    2. You can also slice your cake crossways and turn it into a layer cake. Drizzle the syrup on both layers and add a layer of frosting or icing for more moisture.

    Storage instructions

    If you do find that you have leftovers, you can store it in an air tight container at room temperature for 4 days or in the fridge for a week.

    Freeze individually wrapped servings for up to 3 months. This makes it easy to grab the amount you need to defrost.

    Ingredients
      

    • 2 cups fine ground almond flour
    • ¼ teaspoon salt
    • ½ teaspoon baking soda
    • 1 ¼ teaspoon cinnamon
    • ¼ cup oil of choice we used avocado oil
    • ¼ cup sugar-free maple flavored syrup or sweetener of choice
    • 3 eggs
    • 1 teaspoon gluten-free vanilla extract

    Optional: For the crumb topping:

    • ½ cup fine ground almond flour
    • 3 tablespoons oil of choice
    • ¼ cup sugar-free sweetener we used Lakanto golden
    Prevent your screen from going dark

    Instructions
     

    • Preheat your oven to 350°F (180°C). Grease an 8x8 baking pan and set aside.
    • In a large mixing bowl, whisk almond flour, salt, baking soda, and cinnamon.
    • Add oil, maple flavored syrup, eggs, and vanilla extract, and mix until well combined.
    • Spoon batter evenly into your prepared pan. Use the back of your spoon to level it out.
    • Optional crumb topping: In a small mixing bowl mix ½ cup almond flour, 3 tablespoons oil, and ¼ cup sweetener. Sprinkle mixture on top of cake and press down lightly with the back of a spoon.
    • Bake for 25-28 minutes, or until the center is set.
    • Remove from the oven and let cool for 5-10 minutes before serving.
    • Store in an airtight container at room temperature.

      Did a search for “keto coffee cake”, i.e., coffee-flavoured cake. This one popped up. Question: where is the coffee among the ingredients?

        Thanks for taking the time to ask. Contrary to popular belief, there is no coffee in coffee cake. I know, doesn't make any sense. It's named coffee cake as it is to be enjoyed in the morning with a cup of coffee.

      I was out of oil so used melted butter. I was running out of maple syrup so used half honey. So good and easy! ❤️

      Clearly, Mama and Sukanya didn't have enough German grandmothers in their lives. I've never thought that coffee cake should taste like coffee, I think it should have plums baked into it. Hooray for culinary diversity!

        Coffee cake is traditionally a cake served with coffee. It doesn't have coffee in it.

      I chanced upon this while looking for a coffee flavoured cake and decided to give it a go, without the topping. I used rapeseed oil, honey, 2 eggs + a banana as I ran out of eggs, and 3 tbsp of instant espresso powder in the dry mix. It turned out divine! Thank u.
