    These almond flour keto donuts are light, tender, and they have a good amount of healthy fats and protein. Plus they're baked, not fried.

    There are only eight ingredients in this keto donut recipe.

    Almond flour - use superfine ground almond flour for the best texture.

    Baking soda - make sure it's not expired.

    Salt - salt balances the sweetness.

    Oil - Use a neutral flavored oil like vegetable or avocado. You can use melted and cooled butter also.

    Sweetener - use can use your choice of sweetener for the donut batter. But for the cinnamon sugar, you want to use the golden raw cane sugar substitute to achieve the right consistency.

    Eggs - adds texture and helps your donuts rise.

    Cinnamon - add more or less to taste. We love this spice in our keto carrot cake bars.

    Vanilla extract - use pure vanilla extract.

    How to make keto cinnamon sugar donuts

    Step 1: In a large mixing bowl, whisk almond flour, salt, and baking soda.

    Eggs, oil, sweetener, cinnamon and vanilla extract being added to the flour mixture in a glass bowl.

    Step 2: Add oil, sweetener, eggs, cinnamon, and vanilla extract.

    Step 3: Mix until well combined.

    Step 4: Spoon or pipe batter into your mini donut pan, careful not to cover the center.

    Step 5: Bake for 10-12 minutes or until the center is set. Remove from the oven and let cool for 5 minutes.

    Step 6: Remove the keto donuts from the pan and dip in the cinnamon sweetener mixture.

    Make sure your eggs are room temperature. I know, what difference could it make. It actually does.

    Almond flour baked goods don't rise as much as conventional, so you want to give them all the help you can.

    Room temperature eggs mix more easily, which results in a smoother, more stable emulsion, this equals fluffier and less dense baked goods.

    If you forgot to take your eggs out of the fridge, placing them in a bowl of warm water for 10 to 15 minutes will do the trick.

    What is the best way to fill my donut pan?

    We find that a piping bag with a large tip is the best, cleanest way to fill a donut pan. If you don't have a piping bag you can carefully spoon the batter into each mold. Try your best not to cover the center.

    How to get cinnamon sugar to stick to a donut?

    The trick is to coat them while the donut is still warm from the oven. If you allow the donut to cool too much, the cinnamon sugar will not stick well.

    Storage instructions

    You can store these keto donuts in the refrigerator for up to a week or in the freezer for up to three months. Make sure to store them in an airtight container.

    Reheat them before serving. These low carb donuts are best enjoyed warm.

    Ingredients
      

    For the keto donuts:

    • 2 cups fine ground almond flour
    • ¼ teaspoon salt
    • ½ teaspoon baking soda
    • ¼ cup oil we use coconut or avocado
    • ¼ cup sugar-free sweetener
    • 3 large eggs room temperature
    • ½ teaspoon cinnamon
    • 1 teaspoon vanilla extract

    For the cinnamon sugar coating:

    • 2 tablespoons granulated sugar free sweetener raw cane sugar substitute
    • ½ teaspoon cinnamon

    Instructions
     

    • Preheat oven to 350°F (180°C). Grease 2 donut pans; set aside.
    • In a large mixing bowl, whisk almond flour, salt, and baking soda.
    • Add oil, sweetener, eggs, cinnamon, and vanilla extract and mix until well combined.
    • Spoon or pipe batter into your mini donut pan, careful not to cover the center.
    • Bake for 10-12 minutes or until the center is set.
    • Remove from the oven and let cool for 5 minutes.
    • In a small mixing bowl, combined remaining sweetener and cinnamon.
    • Dip the tops of each donut into the cinnamon sugar mixture. Flip the donut over and coat the bottom.
    • Store in an airtight container at room temperature for up to 2 days.

      Switched oil for butter and added 6Tbs pro okio Greek yogurt and 2 scoops vanillia protein powder and added 1/4-1/2c heavy whipping cream these came out airy and more of a cake like consistency. They were delicious! Followed rest of recipe. Wanted mine to have added protein to meet my needs. Thanks for recipe!
