    Step by Step Instructions

    Step 1: Preheat the oven to 400F. Line a rimmed baking sheet with parchment paper and set aside. Combine all of the seasonings in a small bowl, mixing well.

    Step 2: Pat the drumsticks dry with paper towels and place them in a large bowl. Drizzle the olive oil over, tossing to coat. Sprinkle the seasonings evenly over the drumsticks and toss to coat.

    Step 3: Place in a single layer on the baking sheet. Bake for 40-45 minutes, flipping halfway through the cooking time, until the chicken is cooked to at least 165F-175F when checked with a meat thermometer.

    Expert tips

    Allow chicken legs to sit out at room temperature for 10-15 minutes to take the chill off prior to seasoning and baking. 

    If you would like extra crispy skin, ensure the chicken is completely dry before tossing the legs in oil and adding the spice blend. Dry the chicken legs with paper towels and then chill uncovered in the fridge for an hour. The cold air will finish drying out the chicken.

    Pre-mix your herb and spice blend. This seasoning blend can be prepared and stored for quick and easy meal prep. We like to store our blend in an empty spice jar.

    Do you bake drumsticks covered or uncovered?

    Always bake chicken uncovered. If you cover, the skin will be rubbery.

    Is it better to bake chicken legs at 350 or 400 degrees?

    Baking at 400 degrees will result in a crispier skin while the chicken still remains juicy.

    Can I use chicken thighs to make this recipe?

    Most definitely. Add 5 minutes of cook time and always use a thermometer to ensure the internal temperature has reached 165 degrees.

    Can I use different seasonings?

    Please experiment with seasonings you like. Try dried rosemary or sage. Want more spice? Use cayenne or red chili flakes.

    Storage Instructions

    Refrigerate in an airtight container and store for up to 4 days. Before storing, allow your baked chicken legs to cool to room temperature.

    Reheat

    Oven: Place in a single layer on a parchment paper lined baking sheet and into a 350 degrees Fahrenheit oven until heated through, which usually takes about 20 minutes.

    Microwave: Place your leftover drumsticks on a microwave-safe plate. Microwave on high for two minutes, then for 30-second bursts until they are heated through.

    Stovetop: Another option is to add 1-2 tablespoons of broth, or water into a saucepan or skillet. Place in a single layer in the pan and cover with a lid, heating on medium-high for approximately 5-7 minutes. Check often, adding more liquid as needed.
