    Pork Chops - You can use bone in or boneless with this recipe.

    Rosemary - Use fresh if you have it, but dried works too. Rosemary is lovely with pork and poultry too. I always have some on hand.

    Olive Oil - for best flavor, use your best extra virgin olive oil. You could also use avocado oil for a dose of healthy fat.

    Lemon Juice - This adds acidity and acts as a meat tenderizer.

    Step by step instructions

    1. Place pork chops in a glass container. Add the remaining ingredients and turn the to coat.
    2. Let marinate for 30 minutes.
    3. Heat your grill.
    4. Grill porkchops as directed in the recipe below until they are done.
    5. Remove from the grill and let rest before serving.

    Bake marinated pork chops 375F for 14-16 minutes for pork chops ½-1-inch thick.

    Expert Tips

    For Safety, the USDA recommends cooking pork to an internal temperature of 145°F, followed by at least a 3 minute rest. The resting time will add a few more degrees of temperature, but also allow the juices inside the meat to redistribute.

    Grilling Pork chops at high heat retains the moisture in the meat, as the heat from the grill sears the outside of the meat, holding the juices in.

    Choose bone-in pork chops when you can. Keeping the bone in keeps your meat juicer and more flavorful.

    How to keep pork chops from drying out?

    There are a few things you can do to keep your pork chops from drying out:
    1. Marinate for a minimum of 30 minutes (3 hours is best). The salt in the marinade will help the pork chop absorb moisture.
    2. Let your chops come to room temperature before hitting the grill.
    3. Cook on high heat with the grill lid closed. You want to quickly grill your pork chops. Keeping the lid closed keeps the temperature higher.
    4. Always rest after cooking to allow the juices to redistribute.

    How to tenderize pork chops?

    There a few tricks to making tender pork chops.
    1. Include an acid in the marinade. The lemon juice in our marinade will break down the meat making it more tender. Vinegar is another acid that works well.
    2. Don't have time to marinate, use a meat mallet and pound your pork chops.

    Should I rinse the pork chops after marinating?

    No, you most definitely do not want to rinse the marinade off as that is where most of the flavor is.

    Storage

    Refrigerate in an airtight container for up to 3 days.

    Freeze for up to 60 days in an airtight container, removing as much air as possible if you use a freezer bag, and place in the coldest part of the freezer.

    Defrost overnight in the refrigerator and reheat to an internal temperature of 145 F.

    Ingredients
      

    • 1 lb. pork chops
    • 1 tablespoon rosemary dried or fresh
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice

    • Place pork chops in a glass container. Add the remaining ingredients and turn the pork chops over to coat.
    • Let the pork chops marinate for a minimum of 30 minutes. 3 hours is best.
    • Heat your grill to medium high heat.
    • Grill porkchops for 6-10 minutes each side (depending on how thick they are) or until the internal temperature reaches 145°F.
    • Remove from the grill and let it rest for 5-10 minutes before serving.

    Notes

    • You can use bone-in or boneless pork chops to make these keto pork chops.
    • Marinate for a minimum of 30 minutes but 3 hours is best. If you don't have time, use a meat mallet and pound the pork chops to tenderize them. Then season as if you were going to marinate and place on the heated grill.
    • Let your pork chops come to room temperature before hitting the hot grill.
    • You're searing these pork chops, so make sure your grill is fully heated before adding pork chops.
    • Cook them with the grill lid closed to maintain a high temperature.
    • Don't skip the resting step. This keeps your pork from drying out.
    • Use a meat thermometer to check when ready. You don't won't to overcook your pork chops as it will dry them out.
