    • Pork breakfast sausage: Choose high-quality, pork breakfast sausage, as you would when making any traditional sausage gravy. Chicken or turkey sausage can also be used.
    • Onion: White, yellow, or red onions are great to use in this recipe. 
    • Garlic: Feel free to use fresh minced garlic or substitute a ½ teaspoon of garlic powder.
    • Heavy cream: Heavy cream is a staple in low-carb cooking. It's rich, creamy, and low in carbs. Be sure to use unsweetened heavy cream to avoid any hidden sugars.
    • Finely ground almond flour: Almond flour is an excellent low-carb substitute for the traditional wheat flour that is commonly used as a thickening agent in gravy. Ensure that your almond flour is finely ground for a smooth texture. Almond flour not only keeps the carb count low, but also adds essential nutrients.
    • Optional seasonings: Depending on your flavor preferences, you can customize this recipe with additional seasonings like sage, thyme, or crushed red pepper flakes for added depth and complexity.

    Step by step instructions

    1. Cook the sausage. Place a large skillet over medium heat. Add the ground sausage, breaking it up into small pieces with a spatula or spoon, until it is browned and cooked thoroughly. This should take about 5-7 minutes. Once the sausage is cooked, use a slotted spoon to remove it from the pan, allowing any excess fat to drain, and transfer it to a plate. Set it aside.
    2. Cook the Onion and garlic. In the same pan with the remaining sausage fat, add the diced onion and minced garlic. Sauté them over low heat until they become softened and translucent. This should take about 3-4 minutes.
    3. Add in the almond flour. Sprinkle the almond flour over the onion and garlic mixture and add the butter. Whisk everything together and allow it to simmer for about 2 minutes. This will help thicken the gravy.
    4. Add the cream and seasoning. Pour in the heavy cream and season with salt and pepper to taste. Stir the mixture thoroughly to combine all the ingredients.
    5. Finish off the creamy gravy. Increase the heat slightly to bring the mixture to a gentle boil, stirring occasionally. Once it starts boiling, reduce the heat to low and let the gravy simmer for about 1 minute. This will allow the flavors to meld. Return the cooked sausage to the pan. Stir everything together and let it cook for another minute or so, ensuring the sausage is evenly coated. If you prefer a thinner gravy, you can gradually add 1 tablespoon of water at a time until it reaches your desired consistency. Stir well after each addition to ensure it is mixed evenly.

    Follow these recommendations to ensure optimal flavor, texture, and a low carb content. 

    Use heavy cream: Don't swap out the heavy cream for milk. Using heavy cream is essential for maintaining a rich, creamy texture without increasing the carb count. Milk will add extra carbs and won't properly thicken.

    Ensure you use superfine almond flour: To avoid a grainy texture use superfine almond flour. Coarser varieties can create a grainy finish.

    Adjust thickness: If you prefer a thinner gravy, you can add a tablespoon or two of water. This allows you to achieve your desired consistency without compromising the flavor.

    Choose ground pork sausage: Select ground pork sausage without casings or links. Be sure to check for added sugars on the nutritional label.

    Avoid overcooking the sausage: Overcooking can make the sausage dry and tough. Cook it until it's browned and crumbly, but still juicy.

    Add some spice: For a bit of kick, add red pepper flakes. This adds a spicy element to your gravy that pairs well with the richness of the cream and sausage.

    Uncovered simmering: Allowing the pan to remain uncovered during simmering helps the liquids reduce to the perfect gravy consistency. This step concentrates the flavors and ensures a thick gravy.

    Whisk for creaminess: After adding the heavy cream, use a whisk: This will help to achieve a smooth, creamy sausage gravy. Whisking evenly distributes the cream and flour and prevents lumps, resulting in a velvety texture.

    Substitutions

    Different meats - If you don't want to use pork, you can easily switch it out with turkey or chicken sausage.

    Xanthan gum - Instead of using almond flour to thicken your gravy, use a ½ teaspoon of xanthan gum. You will want to thoroughly mix it with the heavy cream before adding to the skillet.

    Storage instructions

    To store properly, allow to cool to room temperature then transfer to an airtight container. Airtight containers help prevent air exposure, which can lead to flavor loss and spoilage. 

    For short-term storage, place the airtight container with your leftover sausage gravy in the refrigerator. Leftover sausage gravy can be refrigerated for 3-4 days. 

    If you want to store for an extended period, the freezer is your best option. Freezing can help preserve the gravy for up to 2-3 months without significant loss of quality. 

    Transfer the cooled gravy into an airtight container, leaving some space at the top to accommodate for expansion during freezing. If you prefer, you can portion the gravy before packing it up.

    Reheating - The ideal method is to use a saucepan or a coated non-stick skillet on the stovetop. Add a small dollop of butter to "grease" the saucepan prior to adding the gravy to prevent sticking. Warm over medium heat while covered until the internal temperature reaches 165 F (75 degrees C).

    If you have portioned your gravy into single servings a microwave can be used in short bursts (30-40 seconds) on medium power to reheat. Remove sausage gravy from the Ziplock bag, plastic container, or any storage container that is not microwave safe prior to reheating. Stir the gravy as it begins to soften, as microwaving heats the outside, not the center.

    It is best to allow your frozen gravy to defrost in the refrigerator overnight prior to reheating.

    Variations

    Increase the spice level - Use spicy pork sausage or add red chili flakes.

    Get herby with it - Add in herbs like thyme or sage

    Cheese - Mix in some cream cheese.

    Nutmeg - you read that correctly. Add ⅛ of a teaspoon. You won't regret it.

    Lemon juice - The acid will balance the fat from sausage, adding a brightness to your gravy. .
