    Easy to make - This is a one bowl recipe that uses minimal ingredients.

    Perfect Texture - Where other almond flour cookies can be dry, these are chewy and perfect in every way.

    It's a Cookie - Seriously, who doesn't love cookies, especially cookies with chocolate chips.

    Options for Sweeteners - We love making these with coconut sugar, but we've tested them with other sweeteners. We're happy to share that you can use brown sugar, or a granulated sugar free sweetener like Swerve.

    Recipe ingredients

    Butter (or Coconut Oil) - You can use butter or coconut oil. We prefer butter.

    Sweetener - You can use brown sugar, coconut sugar, or a sugar free sweetener.

    Egg - To help hold everything together and help the cookies rise.

    Vanilla Extract - Just like in traditional chocolate chips cookies, we're adding a little vanilla extract. Use a high quality vanilla extract.

    Almond Flour - The star of the show.

    Flax seed meal (ground flax seeds) - For texture.

    Baking Soda - To help the cookies rise.

    Salt - To balance some of the flavors.

    Keto Chocolate Chips or Chopped Chocolate - You can use your favorite chocolate chips or chopped chocolate bar. We love to make our own and add them to our almond flour scones.

    How to make almond flour chocolate chip cookies

    You can make these cookies in just a few simple steps:

    1. In a large mixing bowl with an electric beater, beat together the coconut oil, or butter, and your sweetener of choice, until smooth.
    2. Add the egg and vanilla and continue to beat until smooth and creamy.
    3. Add in the almond flour, flax seed meal, salt, and baking soda and beat until combined.
    4. Fold in the chopped dark chocolate (or chocolate chips). Place in the refrigerator while you preheat your oven.
    5. Preheat the oven to 350ºF. Use a cookie scoop to scoop cookie dough into balls and place them on a parchment lined baking sheet two inches apart.
    6. Bake for 12 minutes or until the center is set and the tops are golden brown. Remove from the oven and slide the parchment paper off the baking sheet onto a cool surface.

    Expert tips

    There are a few things you must do to make the best cookies everytime.

    • Chill bay chill - Don't skip placing your made cookie dough in the fridge while your oven preheats. This allows the butter to get cold again, which in turn results in fluffy, chewy cookies. No chill equals flat cookies.
    • Correct flour to butter ratio - Almond flour is different to regular flour. When measuring your 2 cups, do not scoop directly into the bag with your measuring cup. Spoon the almond flour into the cup.
    • Where do you store your almond flour? - Because almond flour can go rancid, most people store it in the fridge. Cold almond flour absorbs more liquid. So allow your 2 cups of almond flour to come to room temperature before mixing in any wet ingredients.

    Substitutions

    There are some easy switches you can make to these cookies work for your diet.

    • Dairy free - Instead of the butter you can use melted and cooled coconut oil. Dark chocolate chips instead of milk.
    • Paleo - Replace the butter as mentioned above. Use coconut sugar instead of brown sugar. Hu Kitchen and Enjoy life make paleo friendly chocolate chips.
    • Low Carb - Use a sugar-free sweetener and keto friendly chocolate.

    Storage instructions

    You can keep these beauties on your countertop for 4 to 5 days in an airtight container. Always allow to cool completely before storing.

    For longer storage, freeze in a zip lock bag or container for 2 to 3 months. Pop in a 300F oven to reheat.

    Variations worth a try

    These cookies are great on their own, but sometimes we like to change them up a bit for fun.

    • Cayenne pepper - add a ¼ teaspoon when making your dough.
    • Butterscotch chips - Cut back on the chocolate chips and mix in some butterscotch.
    • Kosher salt - Sprinkle some on each cookie right out of the oven.
    • Andes mints - Instead of chocolate chips, chop up some Andes.

    Equipment

    Ingredients
      

    • ½ cup butter or coconut oil at room temperature
    • ½ cup brown sugar coconut sugar, or sugar free sweetener
    • 1 large egg
    • 1 teaspoon gluten-free vanilla extract
    • 2 cups blanched almond flour
    • ¼ cup flax seed meal ground flax seed
    • ½ teaspoon baking soda
    • ¼ teaspoon salt omit if using salted butter
    • 1 cup chopped dark chocolate pieces or chocolate chips of choice
    Prevent your screen from going dark

    Instructions
     

    •  In a large mixing bowl with an electric beater, beat together the butter and brown sugar (or sugar of choice) until smooth.
    • Add the egg and vanilla and continue to beat until smooth and creamy.
    • Add in the almond flour, flax seed meal, salt, and baking soda and beat until combined.
    • Fold in the chopped chocolate (or chocolate chips). Place in the refrigerator while you preheat your oven.
    • Preheat the oven to 350ºF. Use a cookie scoop to scoop cookie dough into balls and place them on a parchment lined baking sheet two inches apart.
    • Bake for 12 minutes or until the center is set and the tops are golden brown. Remove from the oven and slide the parchment paper off the baking sheet onto a cool surface.
    • Store in an airtight container at room temperature for up to three days. Cookies will stay soft and chewy.

    Notes

    • Remember when measuring almond flour to spoon your flour into your measuring cup, then level it. Do not dip your measuring cup into the flour then level, it will be too much almond flour.
    • Chill baby chill. Allow your dough to chill while your oven preheats. Skipping this part will result in flat cookies.
    • You can use coconut oil, dairy-free butter, or butter (if you do dairy).
    • You can use chopped chocolate or chocolate chips.

        We haven't tried it. It might be best to look up a oat flour chocolate chip recipe, just in case.

      Hi,
      Did you use an egg or flax seed? The recipe says 1/4 cup flax seed but the directions calls for an 1 egg.

        Hi Susan,
        This recipe calls for both egg and flax seed meal (ground flax seed). They ground flax seed really helps with the texture. I hope that helps.
