Cottage Fries are crispy on the outside, fluffy on the inside, and perfectly spiced for the perfect side dish to compliment any dinner. Potatoes are a versatile vegetable that can be enjoyed a plethora of different ways.

Ingredients
  

  • 4 large baking potatoes cleaned and sliced into ⅓-inch-thick rounds
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper or to taste
  • 3 tablespoons olive oil

Instructions
 

  • Preheat oven to 425 F degrees. Line a baking sheet with parchment paper; set aside.
  • In a large mixing bowl, combine the potatoes, salt, pepper, cayenne pepper, and olive oil.
  • Stir until the potatoes are evenly coated with oil.
  • Place potato rounds on the prepared baking sheet, spaced evenly apart, and bake for 20 minutes.
  • Remove from oven, flip over each potato slice, and return to the oven for an additional 20 minutes, or until they are golden brown and crispy.
  • Serve warm.

Notes

  • What kind of potatoes should you use? For this recipe, we used russet potatoes, but you can use any potato type you like.
  • The thicker the potato slices, the longer they will take to cook through.
  • Feel free to use any spice blend you like. They would be great with dried thyme, rosemary, Cajun seasoning, or a Greek spice blend.
  • Storage Tip: These Cottage Fries a best enjoyed warm, but you can store them in an airtight container in the refrigerator for up to 3 days. Though they may lose their crispy texture when reheated.
  • Storage Tip: Cottage Fries can be frozen for up to 3 months. To reheat, warm them in an oven at 350F for 10-15 minutes, flipping them over halfway through cooking.
