Burrata Caprese

Ingredients
  

  • 8 ounces Burrata cheese 2 balls
  • 1 package of fresh basil
  • 12 small multicolored tomatoes
  • 2 large heirloom tomatoes two different colors if available – purple, red, orange, yellow
  • 2 Tablespoons extra virgin olive oil for drizzling
  • 2 Tablespoons balsamic vinegar for drizzling
  • ½ Teaspoon Kosher salt Salt Flakes are best
  • 1 Tablespoon dried Italian herbs [dried oregano or dried basil] for garnish

Instructions
 

  • Slice large tomatoes and cut small tomatoes in half
  • Tear or chop most of the basil leaves (keep 6 whole for garnish).
  • Layer platter with tomatoes and sprinkle with ¼ teaspoon of salt and ½ tablespoon of dried herbs.
  • Place Burrata cheese balls over the tomatoes and tear them into pieces using your thumbs, scattering the chunks over the tomatoes.
  • Place chopped fresh basil on top of the tomatoes and burrata.
  • Drizzle with olive oil and balsamic vinegar.
  • Sprinkle with remaining dried Italian herbs and salt.
  • Garnish with remaining whole basil leaves.

Notes

Prepare burrata: Gently drain the liquid from the burrata container and roll the ball of burrata into your hand. Place it on top of your prepared caprese salad and use your thumbs or two forks to break it open.
  1. Use Good quality extra virgin olive oil. Good olive oil yields a flavorful dish. 
  2. High-quality Balsamic Vinegar - look for Modena PGI on the bottle. It's a certification from Italy that guarantees quality.
  3. Let the Burrata come to room temperature - remove the container from the fridge 30 minutes before you make your salad. This enhances the flavor and creaminess of burrata.
  4. Don't forget the salt - Burrata Cheese has no added salt. Kosher salt,  Maldon flaked sea salt or other types of flaky salt add texture and enhance the sweet balsamic glaze.
  5. Farmer's market tomatoes and in-season produce have the best flavor and texture.
