Making Low Carb Cookies
When making low carb cookie recipes and keto cookies, you'll want to follow a few tips and tricks to make sure your low carb cookies don't spread into a cookie mess or worse, crumble the second you remove them from the baking sheet.
STOCK UP ON STAPLES
When baking keto desserts and keto cookie recipes, stock up on baking essentials like keto friendly flours, sweeteners, butter, xanthan gum, and add-ins like sugar free chocolate chips.
READ THE ENTIRE RECIPE BEFORE STARTING
It’s important to read the entire keto cookies recipe before you start baking and follow it exactly. I have caught myself being soft with my techniques and measuring - only to end up with a recipe fail. I remind myself over and over the importance of following a recipe, especially when working with keto flours and sweeteners.
MEASURE CAREFULLY
Measure all your ingredients carefully, using a glass measuring cup for wet ingredients and regular measuring cups and teaspoons for dry ingredients.
BEFORE YOU BEGIN
Check that all your ingredients are keto friendly. Also, Like I mentioned, I recommend reading recipe instructions before you begin. This will help you understand everything required and visualize the steps.
OVEN TEMPERATURE
Oven temperatures vary slightly from oven to oven. I recommend getting an oven thermometer to see where your temperatures check in at. Adjust baking times and/or temperature settings accordingly.
I suggest letting your oven temperature stabilize for at least 5-15 minutes after the preheat cycle is complete, before baking.
FLOUR MEASUREMENTS WHEN MAKING KETO COOKIE RECIPES
Always measure keto flours by spooning the flour or the mix lightly into a measuring cup and leveling off the top with the back of a knife. Weighing flours is the best method. I don't have weight measurements for all my recipes yet.
It is not necessary, but a best practice, to stir or sift flours, starches, gums, salt and yeast or baking powder together so everything is evenly distributed.
KETO COOKIES - BEST PRACTICES
Make sure baking soda and baking powder are fresh and far from the expire date.
If a keto cookie recipe calls for dough to be refrigerated, follow those instructions exactly. The time in the refrigerator will allow the dough to stiffen and absorb more of the liquid so the protein structure can develop.
Ingredients should be at room temperature. Don't panic - it's okay if they aren't.
Some keto cookie recipes suggest using a food processor to cut butter into doughs and crusts. If you don’t have a food processor, simply cut butter in with a pastry blender or fork and knife.

WHAT SWEETENERS CAN I USE IN KETO COOKIES?
There are so many keto sweeteners to choose from. You can use your sweetener of choice in most keto cookies. We’ve used granulated Swerve and Lakanto in our keto cookie recipes.
Swerve and Lakanto both make a white and brown sugar sweetener and a powdered sweetener.
Just note that the flavor will be slightly different with each sweetener. Maple flavored syrup tends to be mild in flavor while still adding a touch of sweetness.
WHAT FLOURS WORK FOR KETO COOKIE RECIPES
When making keto cookie recipes, you want to stick with low carb flours and starches, like almond flour and coconut flour. Most of our recipes use almond flour but some do use coconut flour.
NOTE that almond flour and coconut flour do not work as a one to one for other flours, and they are not always interchangeable.
Both almond flour and coconut flour absorb more of the liquid ingredients that other flours.
Cassava flour is also a good keto friendly flour, but we haven't worked with it much yet.
As always, follow the recipe exactly the first time until you get a good feel for it. Once you know how the recipe works you can try a substitution. We recommend only subbing one ingredient at a time, that way if the recipe doesn't work you know which ingredient may have caused it.
WORKING WITH ALMOND FLOUR
Many of our keto desserts use almond flour.
One thing to note about using almond flour is that it is NOT a 1-to-1 for other grain-free or gluten-free flours. It has a lot more protein and fat, and less starch, so it reacts differently in recipes.
It’s best stored in the refrigerator or freezer if you’re not going to use it right away.
Always bring almond meal or almond flour to room temperature before using it.
If you use it cold, it’ll absorb more of the liquid and your keto desserts batter will be thicker than it should be.

Coconut Flour is NOT a 1-to-1 for other grain-free or gluten-free flours. It has a lot more protein and fat, and less starch, so it reacts differently in recipes.

We're including our quick whipped cream recipes. Sandwich a big spoonful of whipped cream between two keto cookies and wrap the cookie sandwich and place it in the freezer for a yummy keto ice cream cookie sandwich!
Ingredients
- 2 cups full fat whipping cream, cold
- 2 tablespoon powdered sweetener
- 1 teaspoon vanilla bean paste (or vanilla extract)
Instructions
- Add all ingredients to a standing mixer.
- Beat on medium-high speed until the whipped cream is thick and stays on the whisk attachment.
- Store in an airtight container in the refrigerator for up to 5 days.
- Add a spoonful of whipped cream in between two keto cookies, wrap it and place it in the freezer for 2 hours or more to make a keto ice cream cookie sandwich.
Notes
- Make sure your whipped cream is full fat, and cold.
- You can swap the full fat whipping cream with full fat coconut cream for a dairy free keto whipped cream.
- You can use your sugar-free sweetener of choice.
- If you add cocoa, you will add carbs so make sure to check the carb count on your cocoa.
