INGREDIENTS IN KETO CHOCOLATE MOUSSE
Heavy Whipping Cream – Whipped cream gives body and substance to the mousse and it adds the fat that you need to feel completely satisfied.
Keto Friendly Chocolate Chips – My chocolate source here is low-carb chocolate chips, but feel free to use chopped up chocolate bars instead. I'm a huge fan of Lily's dark chocolate chips, and I always have a bag or two of them in the cupboard.
Vanilla Extract – Vanilla adds balance and brings out the sweetness of the chocolate.

Many keto mousse recipes call for heavy whipping cream and unsweetened cocoa. I feel like that method creates basically chocolate flavored Keto Whipped Cream.
Other mousse recipes require cooking on the stove to make a pudding-like mousse. Some keto mousse recipes use cream cheese to make them thick and heavy.
I wanted this Keto Mousse recipe to be easy, so it's a no-cook mousse recipe. I also wanted it to be rich and thick, so I'm using chocolate instead of cocoa powder. The chocolate chips really add depth and texture to this keto mousse recipe without weighing it down.

HOW TO MAKE KETO CHOCOLATE MOUSSE
- Add heavy whipping cream and keto friendly chocolate chips to a medium microwaveable mixing bowl.
- Microwave for 1 minute, stir, then heat for an additional 1 minute. Remove the bowl from the microwave and stir until the chocolate chips are melted and the mixture is smooth.
- Chill in the refrigerator until firm. Remove from the fridge and whip the mousse, to incorporate air.
- Add remaining heavy whipping cream and vanilla extract to the bowl of an electric mixer and mix on high speed until the whipping cream starts to form stiff peaks.
- Add the whipped cream to the chocolate mousse.
- Fold the whipped cream into the mousse until it’s fully incorporated and the color is consistent.

TIPS FOR MAKING THE BEST KETO CHOCOLATE MOUSSE
- You can heat the milk and chocolate in a double boiler if you prefer not to use the microwave. Either way, be sure to keep an eye on it so that the milk doesn't scald or burn.
- Don't overmix the cream. Once you reach the stiff peaks point, turn off the mixer before you make butter. See the photos for what it should look like.
- Use a silicone spatula to gently fold the cream into the chocolate. This will allow the air you whipped in to stay in your final product.

- 1 cup keto friendly chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Add half the heavy whipping cream and keto friendly chocolate chips to a medium microwaveable mixing bowl.
